Jasmine flowers normally bloom at night, so buds are picked in the afternoon and layered with tea in the evening just as they open. The blossoms can take about four hours to impart their lovely essence, requiring constant monitoring and this whole process is repeated several times before being hand-rolled into elegant pearls.
Infuse for 3-4 minutes in water well below boiling (80°C). Add just a few tea pearls per serving and can re-infuse for up to 3 times.
According to legend a Chinese emperor in the Song dynasty (960-1279AD) regularly used several hundred pots of jasmine to perfume the palace grounds. And it was around this time the Chinese began to scent their teas by adding blossoms from jasmine, rose, lotus and lychee.
