Pancake Day is nearly here – time for some flipping fun! Don't let that stop you though, everyday is pancake day... We share some of our favourite easy pancake recipes for you to try at home the Chateau Rouge way!

Any of these methods are very flexible and can be adapted to use dairy alternatives or also gluten-free flours. There are also so many different ways to serve your pancakes, depending on the strength of your sweet tooth. Time to experiment?

Crepes: French-style, simple pancake recipes

Try these light, delicious pancakes, French style! Ooh, la la!

Ingredients:

  • Three medium-sized, free-range eggs
  • 140g flour
  • 225ml milk
  • Two tablespoons of butter
  • One teaspoon of sugar
  • A quarter of a teaspoon of salt
  • A little oil, for lining the frying pan

Directions:

  1. Mix the flour, sugar and salt together in a bowl. In another bowl, or in a mixer, whisk the eggs and milk together to form a fluffy mixture.
  2. Drizzle a little oil in the frying pan and add to a medium heat. Drop the mixture into the pan, two tablespoons at a time.
  3. Move the pan around to ensure the batter remains in a thin layer.
  4. Loosen the crepes at the edges of the plans with a spatula and flip so they can be booked on both sides.
  5. Cook until the crepe is lightly browned on both sides and the batter is cooked through.

Serving suggestion:

Why not make this a really indulgent treat, by adding fresh fruit, cinnamon, some honey, or perhaps a tablespoon of your favourite jam or spread to the crepes? You can serve them in layers, with gooey, sweet spread in between, or roll up individual crepes with a layer of jam drizzled down the middle. American-style pancakes recipe

Ingredients:
  • 135g flour (plain)
  • One teaspoon of baking powder
  • Half a teaspoon of salt
  • Two tablespoons of caster sugar
  • 130ml milk
  • One large, free-range egg
  • Two tablespoons butter or olive oil

Directions:

Mix the flour, baking powder, salt and sugar in a bowl. In another, lightly beat the egg and whisk together with the milk. Pour this into the mixing bowl with the flour mixture and beat into a smooth batter, so there are no lumps.

Add a little butter or oil to a non-stick pan and place over medium heat. Add a few tablespoons of the pancake batter, aiming to cook a couple of pancakes at a time. American pancakes are thicker, so you want them to be around 1cm thick when wholly risen. When you see the top of the pancakes start to bubble, flip them over and cook on both sides until nicely browned and fully risen.

Serving suggestion:

Best served with maple syrup, honey, jam or some gently melted butter. Or even with delicious fresh blueberry pancakes Yummy, healthy sweet pancakes!

Tasty Pancake Day Treats_Chateau Rouge Fine Foods_French Cheese Crepes

Dairy-free pancakes

Ingredients:
  • 250g flour (you can use gluten-free flour)
  • 40g porridge oats
  • A pinch of salt
  • One tablespoon of caster sugar
  • One large, free-range egg
  • 300ml oat milk
  • A little vegetable oil, for frying

Directions:

  1. Combine the flour, oats, egg, sugar and salt in a large bowl and whisk together.
  2. Use a non-stick pan and heat over a medium heat. Add a little oil and pour the batter one a quarter at a time. Tilt the pan to cover and get the desired pancake shape.
  3. Cook until the top of the batter is set (usually 1-2 minutes), then flip over and cook for the same amount of time on the other side. 

Serving suggestion: 

Serve drizzled with jam, fruit spread, syrup, or some fresh berries – these go really well with raspberries and blueberries.

Sweet and sour savoury pancakes

Ingredients:

  • Three medium-sized, free-range eggs
  • 140g flour
  • 260g cheese (we recommend grated, mature Cheddar, or crumble Feta)
  • Two tablespoons of butter
  • One teaspoon of baking powder
  • A quarter of a teaspoon of salt
  • A little oil, for lining the frying pan

Directions:

Use the same method as for the American pancakes recipe, but stir in the cheese once you have whisked the batter. Once the pancakes are ready, spread with a little of our organic fig and walnut jam.

Serving suggestion:

Crumble or grate a little more cheese on top, add some walnut quarters, and a little freshly ground pepper. Delicious!
